Recipe: Apple Crumble Muffins by Jessica Rose

These apple crumble muffins are a perfect way to bake with fall apples. Kids love the sweet crumbly topping -- you could almost get away with calling these apple crumble cupcakes, they're so delicious!I think our kids enjoy helping us cook with the fresh foods from each season because they love the traditions that celebrate each new season of the year. For example, peaches are our family's symbol that Summer has officially begun, while apples & pumpkins symbolize the Fall.

These lightly spiced muffins filled with apples are hard to beat with their crisp, buttery crumb topping. Enjoy our Apple Crumble Muffins!

Crumble topping:

1 cup all-purpose flour

2/3 cup granulated sugar

2 tsp. ground cinnamon

½ tsp. ground ginger

1 tsp. kosher salt

1 tsp. vanilla extract

½ cup unsalted butter, melted

Muffins:

2 cups all-purpose flour

½ cup granulated sugar

½ cup packed light brown sugar

2 tsp. baking powder

1 tsp. ground cinnamon

1 tsp. ground ginger

1 tsp. kosher salt

1 large egg

½ cup unsalted butter, melted

½ cup milk

2 tsp. vanilla extract

1 large apple, chopped (about 2 cups)

Method:

1. To make the crumble, whisk together flour, sugar, cinnamon, ginger, and salt in a medium bowl. Add vanilla and melted butter to flour mixture, stirring until mixture resembles wet sand. Cover and chill while making muffin batter.

2. Preheat oven to 350 degrees F. You can use muffin liners or a greased muffin pan.

3. Stir together the flour, granulated sugar, brown sugar, baking powder, cinnamon, ginger, and salt in a large bowl.

4. Whisk together egg, melted butter, milk, and vanilla in a separate medium bowl.

4. Add egg mixture and apples to the dry ingredients in the large bowl, and stir just until combined.

5. Spoon batter evenly into cups of a lightly greased 12-cup standard muffin pan. Top evenly with crumble topping.

6. Bake 25 minutes or until a toothpick inserted in the center comes out mostly clean with a few moist crumbs attached.

7. Cool in pan on a wire rack 10 minutes. Run a butter knife or offset spatula around the edges of each muffin to remove from pan. Serve warm, or cool on a wire rack.
