Recipe: Blistered Tomato Toast by Jennah Jensen

Switching things up can be a great way to entice your littles to try new foods. This blistered tomato toast is fun but still pretty healthy! It’s great as a snack or added onto a meal. Lycopene is a powerful antioxidant found in tomatoes and is even more potent when cooked! For the base of the toast I like using either smashed avocados or hummus, both of which are full of nutrients and healthy fats that are essential for growing bodies and brains. You can keep it simple with just the base and tomatoes or pile on some optional toppings for even more diversity. Either way, if some rendition of this doesn’t become your kids’ new favorite, there’s a good chance it will become yours!

Ingredients:

  • 2 cups cherry tomatoes

  • 2 avocados or several tablespoons hummus

  • 4 slices of bread (I love using Ezekiel or organic sourdough)

  • olive oil, as needed

  • pinch of salt

       Optional Toppings:

  • fresh cilantro or herb of choice

  • red onion, finely sliced

  • sprouts

  • hemp seeds

Cooking Method:

  • Coat a frying pan with a small amount of oil and preheat on medium heat. Once heated, add tomatoes and stir occasionally until they develop blistered skins and become juicy. Turn off heat and set aside.

  • While tomatoes are cooling toast the bread then spread with avocado or hummus. Add a pinch of salt then layer on the blistered tomatoes along with any other toppings that sound good to you! Add another small pinch of salt to the top and enjoy!
