Recipe: Chestnut Soup by William W. Li, MD

A delicious way to get ellagic acid from chestnuts, this soup is comfort food for all seasons. You can serve this with sautéed mushrooms and crusty sourdough bread.  (Tip: organic ingredients will provide the biggest benefits because they contain more beneficial bioactives)

Ingredients:
2 tablespoons extra virgin olive oil, plus more for garnish
1 large shallot, chopped
2 ribs of celery with leafy tops, chopped
1 medium carrot, chopped
1 clove garlic, chopped
2 sprigs thyme, leaves picked
3 fresh or 1 dried bay leaf, left whole to be removed later
Sea salt, to taste
Black pepper, to taste
1½ cups cooked chestnuts
4 cups vegetable stock


Preparation:
Heat the extra virgin olive oil in a medium saucepan over medium high heat. Add the shallot, celery, carrots, garlic, thyme, bay leaf, salt, and pepper and sauté until fragrant, about 5–7 minutes. Add the chestnuts and stir well to combine. Add the vegetable stock, bring to a boil, and then reduce heat and simmer over medium heat for 20 minutes. Remove the bay leaves. 

Using an immersion blender, process the soup until smooth and creamy. Season with salt and pepper to taste. Top bowls of soup with a light drizzle of good-quality extra virgin olive oil.
