Recipe: Halloween Crispy Bites by Jennah Jensen
Get into the Halloween spirit with these quick and easy Halloween Crispy Bites, a spin off of the traditional Rice Krispie Treat but with a festive flair. This is such a fun and simple recipe to make with your littles to get into the seasonal spirit together! They’re perfect for bringing to halloween parties, potlucks, or wherever your festivities take you! Though this is a treat meant for indulging, I wanted it to be just a little bit on the healthier side so I used matcha powder as a healthier alternative to food coloring. Moringa powder also looks and tastes great, plus either powder will add just a hint of unexpected antioxidants… a real trick for your treat goers!
Makes about 20 bite sized treats.
Ingredients:
10oz package of plant based mini marshmallows or marshmallows of choice (I’m using Dandies Minis Vegan Marshmallows)
1.5 cups crispy rice cereal
1/4 cup plant based butter or butter of choice
2 tablespoons matcha powder or moringa powder
1 tablespoon vanilla extract
festive sprinkles of choice
Method:
Using a large nonstick pan, melt the plant based butter and marshmallows on medium to medium-low heat. Stir occasionally until the marshmallows are completely melted, about 5 minutes or so. I’m using mini marshmallows because they tend to melt more cohesively, although regular sized marshmallows are just fine as well!
Once the marshmallows are completely melted, remove from heat and very quickly work in the matcha powder and vanilla, then fold in the cereal. Stir until everything is well combined. Using a silicone spatula will help make mixing this gooey treat a bit easier!
Let the mixture rest for a minute or two until it is cool enough to handle, then using your hands form into a ball or desired shape. Adorn your treats by dipping them in festive sprinkles of choice. Place in cupcake tins or on a serving platter and you’re good to go!
