Recipe: Mango Coconut Popsicles by Jennah Jensen
Nothing says summer like an icy treat! But if you’ve browsed the ingredients of popsicles sold in stores you’ve probably found lots of refined sugar and juice that’s been so concentrated it’s far from real fruit. These Mango Coconut Popsicles are healthy enough you could serve them at breakfast! They contain only 3 healthy ingredients and they’re super simple to make! Additionally, incorporating frozen fruit into your family’s diet can be a clever way to get in those fruit servings for those who are reluctant to eat a piece of fruit itself. Here I’ve used mango but this recipe is so versatile you can easily swap it out for another fruit you prefer. Pineapple, strawberries and blueberries are all delicious options!
* Makes about 10 popsicles
Ingredients:
1 can full fat coconut milk, unsweetened
3 cups fresh or frozen mango (or fruit of choice)
6 pitted medjool dates (or to-taste)
Method:
Cut dates into small pieces to help with blending, then add all ingredients to a blender and blend on high until smooth.
Pour mixture into popsicle molds and freeze overnight.
