Mama Nourishment by Jennah Jensen

As mamas, papas and caretakers it’s especially important that we’re taking care of ourselves so that we can show up for the ones we love. One of the best ways to show ourselves loving kindness is to support our bodies from the inside out by consuming nutrient dense, whole foods. The foods we eat have a direct impact on our mood, energy levels, hormones and cognition to name just a few! If you’re a pregnant or breastfeeding mama, eating an abundance of calories through wholesome meals helps to improve the nutrient quality of your breastmilk and is key to the overall health of you and your growing babe(s)! In this recipe I made sure to include clean sources of all the things - healthy fats, healthy carbohydrates, protein and vitamin and mineral rich foods. Enjoy until completely satiated for a balanced approach to “mama nourishment”.

            Batch Prepare:

  • 1 cup golden/white quinoa, cooked in 2 cups water

  • 1 cup kale, de-stemmed + chopped

  • 1-2 lemons, squeezed

  • 3/4 teaspoon salt or to taste

            

             For Each Bowl:

  • 1-2 large servings of quinoa greens mixture

  • 1 handful canned chickpeas, drained + rinsed

  • 1 handful cucumber, chopped

  • 1 handful blueberries   

  • 1/2 avocado

  • 2-3 tablespoons hemp seeds or seed of choice

  • 1-2 tablespoons hummus or tahini

  • 4-5 tablespoons fresh dill or parsley, minced

  • 1/2 lemon to squeeze on top


             Method:

  • Start by cooking one cup of quinoa according to package instructions. Extra quinoa can be used for multiple bowls or saved for another recipe. Once quinoa is done cooking, fluff with a fork and let cool for about 10-15 minutes. Then stir in chopped kale, lemon juice and salt to taste.

  • Grab your bowl(s) and for each bowl add 1-2 large servings of quinoa mixture, 1 handful cucumber, 1 handful chickpeas and 1 handful of blueberries.

  • Top with avocado, hemp seeds, fresh dill, hummus and an extra squeeze of lemon juice and enjoy!
