Recipe: Classic Potato Salad by Jennah Jensen

Potato salad is one of those classics that the whole family will love and if you haven’t attempted making it yourself, you’re in for a treat because it’s so easy and always turns out so delicious! It packs perfectly for on the go lunches or family gatherings, making it fantastic for bbq’s and potlucks!

            Ingredients

  • 3 pound bag red potatoes

  • 1 heaping cup vegan mayonnaise or mayonnaise of choice

  • 2 cups celery, sliced

  • 1 cup red onion, sliced (optional) green onion or chives are also delicious!

  • 1 cup dill pickles, sliced

  • 1/2 cup black olives, sliced

  • 1 bunch fresh dill, minced

  • 3 tablespoons mustard

  • 2 teaspoons seasoning salt (I’m using Johnny’s Seasoning Salt no MSG version.)

            Method

  • Start by washing your potatoes then give them a rough chop. You may prefer to peel your potatoes but personally I don’t mind the texture and I like to save time so I usually skip this step. Add to a large pot of boiling water and cook until fork tender.

  • Next drain the potatoes and add them to a large mixing bowl or back into the original pot.

  • Add all of the ingredients to the potatoes and combine well. Note that potatoes usually come in either a 3 or 5 pound bag. This recipe is for a 3 pound bag so if you decide to use a 5 pound bag you may need to either use less potatoes or slightly adjust the ingredients to taste. I hope you enjoy!
