Recipe: Healthy Brownies by Cherylee Bennett
These Brownies are a healthy take on an old favourite. We often go away racing, I now get requests to make a batch to take away with us. Even the biggest sweet tooth loves these. They are gluten free, dairy free, nut free, refined sugar free and vegan. I hope you love them as much as we do.
HEALTHY BROWNIES – GF, DF, SF, V
INGREDIENTS:
3/4 cup – oat flour
3/4 cup – buckwheat flour
1/3 cup – cacao powder
1/4 TSP – baking soda
1/4 TSP – baking powder
1/4 TSP – sea salt
2 TBSP – chia seeds
6 TBSP – filtered water
1/3 cup – maple syrup
1 TSP – vanilla extract paste
1/3 – coconut oil
1/2 cup – soy or oat mylk
1/2 packet – pana mylk choc chips
4 – pitted medjool dates
4 TBSP – hot water
METHOD:
Pre-heat oven to 160 degrees fan forced.
Add the hot water to the pitted dates, set aside.
Combine the chia seeds and the filtered water, set aside.
Mix all the dry ingredients together in one bowl, then add the coconut oil and combine well.
In another bowl, combine all the wet ingredients. *Except the chia egg and dates soaking.
Once the dates have softened mash them into a paste, add to the the wet ingredients bowl.
Once the chia egg is ready you may add them to the wet mixture bowl and combine.
You may now add the wet ingredients to the dry ingredients and combine well.
Place in a lined 20 cm x 20 cm baking tin.
Bake in a 160 degrees oven for 25 minutes, if you prefer them gooey or if you like them firmer then allow a few more minutes baking time.
