Recipe: Chickpea & Veggie Fritters

These crispy chickpea and veggie fritters are a perfect plant-based meal or snack for the whole family. They’re packed with protein, fiber, and colorful veggies, making them a nutritious and delicious option. Plus, they’re great for little hands to grab and dip! Serve them with a side of dairy-free yogurt or hummus for extra flavor.

Ingredients:

  • 1 can (15 oz) chickpeas, drained and rinsed

  • 1 small zucchini, grated and excess water squeezed out

  • 1 small carrot, grated

  • ½ cup oat flour (or blended oats)

  • ¼ cup chopped fresh parsley (or cilantro)

  • 1 clove garlic, minced

  • ½ tsp ground cumin

  • ½ tsp smoked paprika

  • ½ tsp salt

  • 1 tbsp lemon juice

  • 2 tbsp chickpea flour (or all-purpose flour)

  • 2 tbsp water

  • 1–2 tbsp olive oil (for frying)


Instructions:

  1. Prepare the Batter – In a large bowl, mash the chickpeas with a fork or potato masher until mostly smooth. Add grated zucchini, carrot, oat flour, parsley, garlic, spices, lemon juice, chickpea flour, and water. Mix well to form a thick batter.

  2. Shape the Fritters – Using your hands, form small patties (about 2 inches wide). If the mixture is too wet, add a little more oat flour.

  3. Cook Until Crispy – Heat olive oil in a pan over medium heat. Cook the fritters for about 3–4 minutes on each side until golden brown and crispy.

  4. Serve & Enjoy – Serve warm with a side of hummus, dairy-free yogurt, or avocado dip.
