Recipe: Chickpea & Veggie Fritters
These crispy chickpea and veggie fritters are a perfect plant-based meal or snack for the whole family. They’re packed with protein, fiber, and colorful veggies, making them a nutritious and delicious option. Plus, they’re great for little hands to grab and dip! Serve them with a side of dairy-free yogurt or hummus for extra flavor.
Ingredients:
1 can (15 oz) chickpeas, drained and rinsed
1 small zucchini, grated and excess water squeezed out
1 small carrot, grated
½ cup oat flour (or blended oats)
¼ cup chopped fresh parsley (or cilantro)
1 clove garlic, minced
½ tsp ground cumin
½ tsp smoked paprika
½ tsp salt
1 tbsp lemon juice
2 tbsp chickpea flour (or all-purpose flour)
2 tbsp water
1–2 tbsp olive oil (for frying)
Instructions:
Prepare the Batter – In a large bowl, mash the chickpeas with a fork or potato masher until mostly smooth. Add grated zucchini, carrot, oat flour, parsley, garlic, spices, lemon juice, chickpea flour, and water. Mix well to form a thick batter.
Shape the Fritters – Using your hands, form small patties (about 2 inches wide). If the mixture is too wet, add a little more oat flour.
Cook Until Crispy – Heat olive oil in a pan over medium heat. Cook the fritters for about 3–4 minutes on each side until golden brown and crispy.
Serve & Enjoy – Serve warm with a side of hummus, dairy-free yogurt, or avocado dip.
