Recipe: Kid Friendly Banana Peanut Butter Bliss Bites
When it comes to our little loves, we all know snacks are very veryyyy important. And the key is being prepared! Which is where bulk recipes come in handy! Get the kiddos involved and prepare a batch to last the week ahead, plus baking them together can be just as fun as eating them! Here’s a simple, delicious, and healthy vegan snack that kids will love. These little banana peanut butter bites are easy to make, and perfect for little hands to help with to mash, mix and roll - and enjoy!
Ingredients:
2 ripe bananas
1/2 cup natural peanut butter (make sure it's vegan and has no added sugar or salt)
1/2 cup unsweetened shredded coconut (plus extra for rolling)
1/4 cup vegan chocolate chips
2 tablespoons chia seeds (optional)
Method:
- Grab all your ingredients and a mixing bowl. Make sure big and little hands are clean and away we go!
- Peel the bananas and place them in the mixing bowl. Use a fork to mash them until they are smooth. Little helpers will really have fun helping with this step!
- Add the peanut butter to the mashed bananas and mix in together until you have a smooth, creamy mixture.
- Then stir in the shredded coconut, vegan chocolate chips, and chia seeds (if you're using). Make sure everything is well combined.
- Take a small spoonful of the mixture and roll it into a ball using your hands. If the mixture is too sticky, you can lightly coat your hands with some extra shredded coconut. Continue this process until all the mixture is used up. Roll each ball in the extra shredded coconut to coat them evenly.
- Place the coconut-coated balls on a plate or tray and put them in the freezer for about 20 minutes. This helps them firm up and makes them easier to handle. Once they’re chilled, take them out and enjoy!
Notes:
- Feel free to get creative with your bliss balls and add other mix-ins like crushed nuts, dried fruit pieces, or a drizzle of agave syrup for extra sweetness.
- You can store any leftover balls in an airtight container in the fridge for up to a week which means snacks for the week are sorted. They also freeze well if you want to keep them longer.
